Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- 1–2 tbsp sugar
- 1 tbsp cornstarch (for crispiness)
Wet Ingredients
- ½ cup vegetable oil (or 1 stick melted butter)
- 2 large eggs
- 1¾ cups milk (add more if needed)
- 1 tsp vanilla extract (optional)
Instructions
- Preheat waffle iron to 350°F.
- In a bowl, whisk together flour, baking powder, salt, sugar, and cornstarch.
- In a separate bowl, whisk oil (or melted butter) and eggs until smooth.
- Add milk and vanilla, then whisk until fully combined.
- Pour wet ingredients into dry ingredients.
- Mix until just combined—don’t overmix (a few lumps are fine).
- Lightly spray waffle iron with non-stick spray.
- Pour about ¾ cup batter into the center.
- Close and cook for 3–5 minutes, or until golden brown.
- Remove and place on a rack or in a warm oven to keep crisp.
