  • Non-stick spray
  • Mixing bowls (1 large, 1 medium)

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1–2 tbsp sugar
  • 1 tbsp cornstarch (for crispiness)

Wet Ingredients

  • ½ cup vegetable oil (or 1 stick melted butter)
  • 2 large eggs
  • 1¾ cups milk (add more if needed)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat waffle iron to 350°F.
  2. In a bowl, whisk together flour, baking powder, salt, sugar, and cornstarch.
  3. In a separate bowl, whisk oil (or melted butter) and eggs until smooth.
  4. Add milk and vanilla, then whisk until fully combined.
  5. Pour wet ingredients into dry ingredients.
  6. Mix until just combined—don’t overmix (a few lumps are fine).
  7. Lightly spray waffle iron with non-stick spray.
  8. Pour about ¾ cup batter into the center.
  9. Close and cook for 3–5 minutes, or until golden brown.
  10. Remove and place on a rack or in a warm oven to keep crisp.
