Boot Culture “Marry Me” Cornbread (Bacon Grease Cast Iron Method)
Ingredients
- 3 tablespoons bacon grease
- 2 cups self-rising yellow cornmeal mix
- 1–2 tablespoons sugar (optional)
- 1 cup milk
- 1/2 cup Greek yogurt
- 1 egg, beaten
Instructions
Step 1: Preheat the skillet (don’t skip this)
Preheat oven to 425°F. Add bacon grease to a 10-inch cast iron skillet and place it in the oven for about 10 minutes, until hot and fully melted. Carefully swirl to coat the bottom.
Step 2: Mix the batter
In a mixing bowl, combine cornmeal mix and sugar. Add milk, Greek yogurt, and beaten egg. Mix until smooth.
Step 3: Pour into hot skillet
Carefully remove the skillet from the oven. Pour batter into the hot, greased skillet—it should sizzle when it hits.
Step 4: Bake
Return to oven and bake for 20–25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
Notes
- The hot skillet + bacon grease is what prevents sticking and creates that crispy crust
- Greek yogurt adds moisture and a slight tang (similar to buttermilk)
- If the batter doesn’t sizzle when poured, the skillet wasn’t hot enough
